Ingredients
  

For the Prime Rib
  • 5 Pounds Prime Rib, bone-in Bring to room temperature 2 hours before cooking
For the Garlic Herb Rub
  • 3 Tablespoons Kosher Salt Divided
  • 1/2 Cup Olive Oil
  • 8 Cloves Garlic, mashed
  • 3 Tablespoons Fresh Rosemary, finely chopped
  • 2 Tablespoons Fresh Thyme, finely chopped
  • 2 Teaspoons Onion Powder
  • 1 Teaspoon Ground Black Pepper

Method
 

  1. Bring the prime rib to room temperature approximately two hours before you plan to cook it.
  2. Preheat your oven to 500 F.
  3. Rub 1 tablespoon of the kosher salt all over the prime rib. Set aside.
  4. In a small bowl, mix together the olive oil, mashed garlic, chopped rosemary, chopped thyme, onion powder, black pepper, and the remaining 2 tablespoons of kosher salt.
  5. Rub the herb mixture all over the prime rib.
  6. Place the prime rib into a cast iron skillet and put it in the oven. Cook for 20 minutes.
  7. Remove the prime rib from the oven and reduce the oven temperature to 325 F.
  8. Insert a meat thermometer into the top of the prime rib, pushing it down into the center.
  9. For medium rare, cook until the internal temperature reaches 135 F. This will take approximately 1.5 hours.
  10. Once done, remove from the oven. Tent the prime rib loosely with tin foil and let it rest for approximately 40 minutes.
  11. Slice and serve.

This recipe is designed to be straightforward for home cooks. The key is bringing the meat to room temperature, searing at a high temperature, then lowering the heat to finish cooking. Using a meat thermometer is the most reliable way to ensure your prime rib is cooked to your desired doneness. For medium-rare, aim for an internal temperature of 135 F. The resting period is crucial for allowing the juices to redistribute, resulting in a more tender and flavorful roast.
