Method
- Bring the prime rib to room temperature approximately two hours before you plan to cook it.
- Preheat your oven to 500 F.
- Rub 1 tablespoon of the kosher salt all over the prime rib. Set aside.
- In a small bowl, mix together the olive oil, mashed garlic, chopped rosemary, chopped thyme, onion powder, black pepper, and the remaining 2 tablespoons of kosher salt.
- Rub the herb mixture all over the prime rib.
- Place the prime rib into a cast iron skillet and put it in the oven. Cook for 20 minutes.
- Remove the prime rib from the oven and reduce the oven temperature to 325 F.
- Insert a meat thermometer into the top of the prime rib, pushing it down into the center.
- For medium rare, cook until the internal temperature reaches 135 F. This will take approximately 1.5 hours.
- Once done, remove from the oven. Tent the prime rib loosely with tin foil and let it rest for approximately 40 minutes.
- Slice and serve.
