Ingredients
  

  • 2/3 cup Milk dairy or non-dairy
  • 1/2 cup Old-fashioned oats
  • 1/2 cup Plain Greek yogurt
  • 1/4 cup Peanut butter smooth, natural
  • 3 Tbsp. Honey or pure maple syrup
  • 1 tsp. Chia seeds
  • 1/2 tsp. Pure vanilla extract
  • 1/4 tsp. Kosher salt
  • 1/4 cup Bittersweet chocolate chips
Toppings (optional)
  • Sliced bananas
  • Chopped roasted peanuts
  • Cocoa nibs
  • Honey

Equipment

  • 8-oz jars or containers
  • Small heatproof bowl

Method
 

  1. In a blender, combine milk, oats, yogurt, peanut butter, honey, chia seeds, vanilla, and salt. Blend until smooth.
  2. Divide the oat mixture between 2 jars or containers. Cover and refrigerate for at least 4 hours, or until the oats are thickened.
  3. In a small heatproof bowl, microwave the chocolate chips in 30-second intervals, stirring between each, until melted and smooth. This should take about 1 minute total. Spoon the melted chocolate over the oats and refrigerate for about 10 minutes, until the chocolate is firm.
  4. Top the oats with sliced bananas, chopped peanuts, cocoa nibs, and honey, if desired.
  5. Make Ahead: You can prepare the oats (without toppings) up to 5 days in advance. Keep them refrigerated.
