Method
- Preheat your oven to 200°C / 400°F (180°C fan-forced).
- Toss the potatoes with the oil and seasonings in a bowl. Spread them on a baking tray that fits everything snugly. Bake for 15 minutes.
- In the same bowl, toss the capsicum and onion with the oil, salt, and pepper. Add them to the baking tray and toss with the potatoes.
- Squeeze the sausage meat out of the casings and dot it randomly over the tray. Scatter the bacon pieces on top.
- Bake for 20 minutes. Toss everything on the tray, then bake for another 15 minutes, or until the potatoes are tender.
- Lower the oven temperature to 180°C / 350°F (160°C fan).
- Push the potato mixture to the sides to create wells for the eggs. Crack the eggs into the wells. Return the tray to the oven and bake for 7 minutes, or until the eggs are set to your liking.
- Scatter with parsley if using, then serve immediately with buttered toast if desired.
