Easy Refried Bean Flautas

Ingredients
  

For the Flautas
  • 15 oz can refried beans homemade or purchased
  • 1/4 cup salsa plus more to serve
  • 1/2 tablespoon chili powder
  • 1 cup Mexican blend cheese
  • 1 green onion thinly sliced (optional)
  • 14 6-inch flour or corn tortillas
  • 2 tablespoons olive oil for brushing
  • 1/4 teaspoon kosher salt for sprinkling
For Dipping

  • salsa
  • sour cream or spicy sour cream mixed with hot sauce

Method
 

  1. Preheat your oven to 425°F. Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, mix the refried beans, salsa, chili powder, shredded cheese, and green onion (if using).
  3. If you are using 100% corn tortillas, microwave them for about 30 seconds with a damp paper towel. This helps prevent cracking and makes them easier to roll. If your tortillas seem brittle, heating them before rolling is helpful.
  4. Lay a tortilla on a work surface. Spoon about 2 tablespoons of the bean mixture onto the bottom half of the tortilla. Roll the tortilla tightly from the bottom. Place the flauta seam-side down on the baking sheet. Repeat for the remaining tortillas.
  5. Brush the tops of the flautas with oil and sprinkle them with salt. Bake for 15 to 20 minutes, until crisp and browned. Serve with salsa, guacamole, or sour cream.

Notes

To freeze flautas, cool them to room temperature, then freeze in a sealed container. To reheat, bake in a 350°F oven for 10 to 12 minutes, until warmed through.
