Cozy Prime Rib For Cold Evenings

Ingredients
  

Prime Rib Roast
  • 5 pounds prime rib roast
  • 1 tablespoon kosher salt
Butter Rub
  • 2 tablespoons very soft unsalted butter
  • 1 tablespoon kosher salt
  • 2 teaspoons freshly ground black pepper
  • 1/8 teaspoon cayenne pepper

Method
 

  1. Gather all ingredients.
  2. Place the prime rib roast on a pan and rub it with 1 tablespoon of kosher salt. Place the meat on a rack or twisted foil so air can circulate underneath. Transfer to the refrigerator for 24 to 48 hours.
  3. Remove the roast from the refrigerator and let it rest for a few hours to come to room temperature. This step is optional.
  4. Preheat your oven to 300 degrees F (150 degrees C). Transfer the roast into a roasting pan, preferably on a rack.
  5. In a small bowl, mix the soft butter with the 1 tablespoon of kosher salt, black pepper, and cayenne pepper. Spread this mixture onto the sides and top of the roast. Add more salt to the top. Pour water into the bottom of the pan.
  6. Roast in the preheated oven until the internal temperature reaches 115 to 120 degrees F (46 to 48 degrees C). This will take about 1 hour and 20 minutes, or approximately 20 minutes per pound. Remove the roast from the oven, cover it with foil, and let it rest for at least 20 minutes before serving.
  7. The drippings from the pan can be deglazed with broth or water and served alongside the meat.
